You have to know when you can let the ai defend, and what you have to defend manually.
As for 1 on 1 finishing, if you can finish near post, do it. If you have the time, do a ballroll before the shot, its almost a guaranteed goal.
If you are free on goal without any defenders around, just do a very low powered finesse shot.
