It was the same during early access. Every time there are less players, the game feels okay. Once more people gets into the game, it all goes to crap.

I was like you at first, I couldn't believe the results when testing latency and packetloss to servers. How come I have delayed gameplay when everythig is stable on my end? well you notice improvement in responsivity late at night and early morning because many factors decides connectivity quality. Not going in to details too much but even your isp network plays a role in your gameplay quality, when there is overload in your country network or even at one hop, you will feel more delay. When playing in none peak times, there is less chance to have delay.
