If you expect AI to do all by itself, it just doesn't work that way. The reason it works for opponent is that we don't understand how second man press works - defenders are always close but harmless, if you don't panic or try risky pass.
Yes you need to set up manual jockey and get gud with predicting opponent movements. You have to play good manual defense, that's the key. No high pressure and team pressure will save you if you don't know how to play extremly good 1-on-1 defense.

I'm very good at manually defending, just like you explain yet I suffer the same problems as the OP suffers. Players are able to play right through my defenders, my defenders won't attempt to make a block or perform the inspector gadget leg routine that I see over and over again.
People are able to pass the ball in and around my box at will, despite me blocking the lanes and smashing **** out of the tackle button they are able to sail right through my team. Shield doesn't work at all.
Try passing it in their box and it is impossible as it will be auto intercepted.
this past WL was the worst.
My defenders don't do anything in the box. My opponent can drag back, fake shot their way to shots. There's only so much you can do manual defending. With input delay and lag, you are at the mercy of servers. Player switching is broke so if you switch to another player it'll take you outside the box.
Like you, I don't understand how my defenders don't do anything while when I get inside my opponent's box, all his players swarm, auto leg block, tackle, or just bump into me making me stumble and not even take a shot.
