As for how, they cheat the same way they get a victory despite quitting, they forge requests to the EA servers, sending different data, than what the actual game would send. They've been doing that since at least FIFA 15.

Also squad battles and rivals completely different. You can have someone who smashes squad battles in ultimate 5-0 each time who can’t get over 15 wins in weekend league. Some pros tried playing squad battles on ultimate and either lost or scrapped a 1 goal win.

Squad Battles is not truly an offline mode. It's a hybrid, because the rewards are based on the community leaderboard. Which is precisely why they cheat, to get the top of the leaderboard, which would net them the best rewards. It's usually the coin farmers that cheat like that.
It's all about the rewards.
