Defending against one twos.
Lost count of how many goals I’ve shipped as a result recently. Seems a little too easy to do from a gameplay point of view but I could definitely deal with them better!

Do what my opponents do, just sprint up to me and clatter in with a clumsy challenge. They never get called.
Try anticipating where they’re going and don’t overcommit. Also using Nesta helps

Anticipate the 1-2 early - you quickly get to learn opponents who spam this move, as soon as they make the first pass, forget closing down the reciever and track the runner manually.
Smart players will see this and run on with the first reciever, but most players who try this move repeatedly are not smart so will play it right to your covering defender.

It should be obvious when your opponent is going to attempt a 1-2...
In which case, keep control of your defender who is marking the first passer (the intended target of the return pass).
Now best is to do this as subtly as possible, in jockey, pull your defender back enough that any ball in behind you can manually track and gather, but close enough that the player might still think the pass is on and doesn't give the final receiver too much space for a pass to feet.
The only time this doesn't work for me is when game is being dumb and Özil walks through my beast of a CB etc.

As the other chap said don’t dive it either, try and control your CDM/CM instead of the CBs. If you do have to use the CBs hold off from tackling, us L2 to jockey and instead of diving in and making your opponents decision for them, make them work to create the openings.

How deep is your defence? You’ll get hate for it and I’ll get hate for saying it but play with a deeper back line. I don’t play drop back but I play with quite a deep and narrow back line. Also have my CDM on stay back so he can help out the CBs. Having a narrow defence will push your CBs closer to each other and your full backs inwards too. It leaves space out wide but it will congest the centre of the pitch which is obviously where your problem are occurring.
