Hold the jockey button while defending. You should be able to predict them coming if the opponent is spamming them throughout the game.

I'd advise starting with a back 4 and changing to a 3 at the back in game. Fast full backs are much more affordable (and quicker) than fast cb's, plus the extra agility and balance will help with joc..
